FOCUS THIS WEEK: Saffron!
Saffron, the much-revered reddish orange stigma of Crocus Sativa plant comes with a high price tag. But, in a world of abundance and skyrocketing medical costs, it gives very high returns. Cooling your body on hot summer days, it is like a natural SSRI or anti-depressant. A few months ago, I did an in depth on Substack and the conclusion was; use saffron sparingly but regularly. Add a pinch to your water or tea. Give it time to bloom.
Cold saffron is nothing short of incredible in flavor, especially in milkshakes and ice cream. Hot saffron is different and just as good. Earthy, floral, subtly sweet with notes of honey. Saffron is sprinkled through many parts of our menu ~ the golden soda, buried inside the chocolate covered Gulab jamun and soon to be on new Kashmiri chicken kebabs launching next month. Tomorrow, we launch the saffron cookie, a sugar cookie suffused with cooling saffron. Also coming is a Saffron cardamom flan to salivate over.

Saffron Fish Stew $32 (Gluten-free, Diary-free)
A delicate stew with local fish and shrimp ~ bathed in a saffron sauce. Chili can overpower saffron, so this one is mild.
Sunday, August 30th – Araam Thali $20 | $25
Potato curry, pooris & semolina halwa. Your choice of lamb keema or butter chicken (only available in-house).
Sunday, August 30th - Biryani
Saffron Chicken Biryani $27 (Gluten-free)
The chicken is sauted with onions and such with a touch of chile. Folded with saffron rice, almonds and currants, it makes for a satisfying biryani.
