Saffron Cream of Wheat

Hot porridge for breakfast transcends cultures and continents. I grew up eating semolina porridge that is very similar to the cream of wheat common here in the States but in India, it was scented with cardamom and cinnamon, topped off with dollops of ghee and called halwa. Cream of wheat, which is like semolina, is made from ground wheat kernels and has been around for over a century. Adding saffron along with the other aromatics elevates it to a hauntingly delicious flavor. When buying saffron, make sure the delicate crimson stigma is bright in color, this will ensure good flavor. Most Middle eastern or Indian grocers do brisk saffron business so they may be your best bet.
