FOCUS THIS WEEK: Chickpea Tofu
This week we dedicate to our beloved Chickpea Tofu! If you've never had it, it's worth coming in to try. A delicious plant-based & gluten-free tofu made with chickpea flour. We serve it on our menu, will be featuring it on this week's specials & is available frozen in our Bake Lab shop for you to use as a cooking aide at home!
Its inception was a happy accident in our kitchen. One day, while making Khandvi, a delicate Gujarati snack which entails cooking chickpea flour with yogurt and seasonings in a pan like a roux (but with no fat), we overcooked the batter to beyond the point of spreading. Constant and vigorous stirring is involved until it becomes fluffy, light and the right consistency to be able to spread thinly and roll. So, remembering that we read something about Shan tofu in Naomi Diguid's book Burma, we spread the mass into a pan and refrigerated it. The next day, when we cut into it, we were amazed at the flavor!
And thus started the Chickpea Tofu on our menu ~ now one of the biggest sellers. For a plant-based protein option, there is nothing better…This week, our fish special will be in the Burmese tradition of Khaw Suey, a to-die-for preparation of a sauce made with roasted chickpea flour, coconut, tamarind, soy and herbs. Our Sunday Biryani, will also highlight our chickpea tofu showcasing another fun iteration of how it can be prepared & enjoyed.
