FOCUS THIS WEEK: BBQ Masala

One of the things I was fond of when I first came to America was barbecue sauces. I thought it was glorious for outdoor grilled foods and such. Over time, when I realized they were pumped with sugar and preservatives, I stopped using them. Which is what inspired our in-house BBQ sauce. When we set about making it, the most important thing was adding flavor with natural ingredients so in went jaggery, caramelized onions, garlic, ginger, sweet potato and a ton of aromatic spices! We made a dry rub, the BBQ masala that complements the sauce. Used together, they are deadly. Our specials this weekend are an ode to that sauce.

The origin of Caribbean and Malaysian rotis (sometimes called buss-up roti, roti kanai) is in Chennai India. Over there, it is also called parotta. Absolutely delicious with flaky layers…dip it into bbq masala marinated grilled swordfish with tomato, coconut, black sesame…yum!
