FOCUS THIS WEEK: Garam Masala
If you have tried to cook Indian food, you probably came across garam masala, the aromatic finishing blend that sneaks its way into everything from snacky foods to a rich curry. This spice blend will be the spotlight for this week.
There are umpteen iterations however it is best made with whole aromatic spices like green and black cardamom, cinnamon, nutmeg, cloves, black pepper and such. I have been honing this masala for many decades. Strong notes of cardamom, delicate on cinnamon and black cardamom and barely-there notes of cloves. Garam means warm, so this blend is ‘warming’ for your body. Eat it lightly in the summer and plenty during winters. This masala does not need to be limited to Indian food ~ rub it on a steak, add it to a stew or long-braised meats like ribs. When we had oxtail on our menu last winter, we’d cook the oxtail overnight in the oven, take it out in the morning and finish it with generous amounts of garam masala…the aroma would waft through the entire restaurant! Fish Cutlet (contains peanuts)- $25
Fish kofta or cutlets meatballs are what you make when you butcher a whole fish and all the tiny parts you cannot cut out get left. These parts, usually cheeks and closest to the bone are some of the tastiest parts of the fish. So, this week we bring you a succulent fish cutlet drenched in a spinach tomato masala…and topped off with coconut chutney.

Sunday, June 21st - Biryani
Lamb Biryani (contains cashews) - $26
Tender chunks of lamb leg slow stewed with onions, ginger and aromatic garam masala gently stirred with basmati rice, toasted cashews and currants…and there you have a classic biryani! Served with a bright cabbage and herb salad and smoked eggplant raita.
