"For years, the idea of making dosas at home intimidated me. On many occasions, I would stare mesmerized at the rapid rhythm of street vendors in Chennai or New Delhi expertly spreading bubbly fermented dosa batter in a circular or oval shape on massive flat skillets and rapidly handing dosas out to hungry customers. I made a few unsuccessful attempts at home and have one distinct memory of over-fermented batter spilling all over my kitchen counter and floor overnight. Relegating it to restaurant food, I stayed away from learning how to make dosas for years. On our opening team at Pondicheri was a young woman, Mary Cuclis, who had traveled to India and urged me to try. I resisted again. One day she pulled out a handwritten recipe given to her by a hotel cook in India. Within months we had dosas on the Pondicheri menu, and I have never looked back."
