Purple Potato & Pepper Roast

Pepper season is in full swing in Houston right now, from shishitos and jalapeños to green bells and sweet orange peppers. For the past few weeks, peppers of every shape and color have appeared at nearly every farmers market stand. These small green peppers are delicate in flavor with a crisp texture. Japanese purple sweet potatoes are less sweet and starchy than traditional orange sweet potatoes, making them a delicious partner for the peppers' tangy bite.
