Everyday Green Salad

Given that summer is upon us, I like to eat some sort of salad at least once a day. For almost two decades, I had given up iceberg lettuce mainly due to its low nutritional benefits compared to other lettuces. However, a mention in Melissa Clark’s newsletter a few weeks ago caught my eye. She adds iceberg lettuce to salads mostly for the crunch factor, especially to salads made mostly with greens like arugula or spinach.
Now I add a little bit of iceberg to many of my salads; the crunch is pretty glorious. Here is a salad with finely minced serrano and ginger. I know these are unusual additions, but give it a try.
